Gherkins are a trend at the moment: The crunchy green vegetable in a jar is currently experiencing a real revival and is enjoying great popularity especially among young consumers. Gherkins are not only popular but also good for our figure. After all, they consist of around 95 percent water and are therefore particularly low in calories.

Our annual gherkin production as Austria’s largest pickled vegetable manufacturer starts in mid-June. This is work that requires a lot of expertise and especially enough manpower. The plants are too sensitive for machine harvesting. The cucumbers are therefore harvested manually by helpers lying down on the local fields in the Eferdinger Becken. After harvesting, the fresh field fruits are quickly put into jars, as harvested cucumbers cannot be stored.
From the field to the jar takes less than 24 hours at efko. The process includes sorting, cleaning, processing, filling, adding the vinegar brine, sealing and pasteurising – a perfectly coordinated production chain. Quality, speed and precision are our great strengths. Owing to the short harvesting season until the end of August, all gherkin jars must be filled within this period of just a few weeks. This makes the processing of pickled gherkins especially challenging.
