The white and red cabbage for all efko cabbage specialities is sourced 100% in Austria and is harvested by our farmers between August and December, then refined into our sauerkraut specialities by efko. efko is the major manufacturer of sauerkraut in Austria.

Immediately after harvesting in the Eferdinger Becken, it is incised in silos and salt is added for natural malolactic fermentation. This fermentation is what gives it its typical delicate tart taste. Then the sauerkraut is refined and carefully heated according to a traditional recipe with selected condiments. This allows a long shelf life without preservatives. We pay attention to refining the white cabbage into our sauerkraut specialities carefully to preserve its goodness as far as possible. It is therefore not only delicious but also healthy.

Sauerkraut is rich in nutrients and at the same time low in calories. Sauerkraut is traditional in Austrian cuisine, which is scarcely imaginable without it. Especially in the winter months, when fewer regional vegetables are available, it makes all the more sense to include this versatile food on the menu often.
